Mashed brinjal salad (Vaingan chirdille) is a salad usually had by GSB Konkani’s along with rice. The purple round brinjal is usually used in the preparation of Mashed brinjal salad (Vaingan chirdille). It is an easy and simple salad had with rice. No grinding required. No onion and garlic added in the recipe. But you can use any round variety of brinjal (pure purple, purple with strips or light purple) in the preparation of Mashed brinjal salad (Vaingan chirdille). It is a spicy salad and no onions and garlic have been used in the preparation. Mashed brinjal salad (Vaingan chirdille )is prepared by mashing and no grinding is required.
Ingredients
You need
- 1 medium sized purple round brinjal
- 2 green chilies (or as per your spiciness level)
- A small piece of tamarind
- A pinch of asafetida/hing
Seasoning
You need
- A small spoon mustard seeds
- A small spoon jeera / cumin seeds
- A small spoon urd dhal
- 1 sprig curry leaves
- Coconut oil for seasoning (you can use any oil but coconut oil is more prefered)
Method
Wash and cut the brinjal into 2 halves and cook them in a vessel adding water or you can even pressure cook them according to your choice. The idea behind is that you should be able to remove the outer skin of the brinjal after cooking it.
While the brinjal is getting cooked slice the green chilies, soak and keep the tamarind in little warm water for 5 to 10 minutes. Later smash it to extract its pulp of the tamarind and keep aside (If you are using the tamarind pulp. I have used the whole tamrind since I will be mashing it along with brinjal)
Now the brinjal might have been cooked. Allow it to cool down. Once it cools down pull off the outer skin of the cooked brinjal.
Mash it with your hands or a spoon nicely to obtain a smooth paste. Add water if required.Now add the sliced green chilies, tamrind (or tamarind pulp), asafetida and salt.
Mash again nicely to a smooth and fine paste.
Now do the seasoning. Heat oil in a kadai and add the mustard seeds. When they splutter add the urd dhal followed by jeera and curry leaves. Pour the seasoning over the mashed brinjal.
