Fruit salad is a sweet dish made in curd with different types of fruits. This is also served as a dessert especially during Konkani Upanayanam and wedding. The dish is liked by both young and old alike and you can see most of the invitees asking for a second serving during a feast.
The dish is sweet and if you taste carefully you will get the taste of ground chilli also.
In the original recipe grapes will be used but in my recipe I had to add raisins since I could not get grapes.
Ingredients
You need
- 1/4th litre curd (sweet)
- 3 tspns of sugar
- Water as required
- A small spoon of salt (This is only for taste. The amount of salt should not exceed that of the sugar)
Fruits needed
- 1 medium size mango (ripe and sweet preferred)
- ½ of a medium sized pomegranate
- 25 to 30 raisins (OR 10 to 15 black grapes)
- 1 ‘Nanjilipoovan’ variety banana
- 2 tbspns of pineapple cut into small pieces
- 1/2 of a big sized red apple (sweet one)
For ground paste
- 2 tbspns grated coconut
- 1 green chilli
For seasoning
- Oil as required for seasoning
- ½ tspn mustard seeds
- 1/4th tspn cumin seeds
- 1 to 2 sprig curry leaves
Method
Preparing the fruits
Wash and peel the mango and cut it into pieces as shown in the photograph. Wash the raisins/grapes and keep aside. Wash and cut the apple into small pieces. Wash and remove the peel of pineapple and cut it into small pieces. Wash and remove the peel of banana and slice it into roundels. Wash and remove the peel and separated the seeds of the pomegranate and keep aside.
Preparing the masolu
Grind coconut gratings and green chillies to a fine paste adding water as required. Keep this aside.
Preparing the curd
Take the required curd in a mixer grinder. Add little water to loosen the curd and give one turn of your mixer for a second. This will help in giving a homogenous mixture of curd and water as well as remove any lumps.
Preparing the fruit salad
Transfer the curd and masolu into the vessel in which you are going to prepare the fruit salad. Add 3 tspns sugar and salt as required and mix well.
Add the cut and sliced fruits to the curd and mix well.
Now heat oil in a kadai/pan for seasoning. Add mustard seeds and when they splutter add the cumin seeds followed by curry leaves. Pour the seasoning to the salad and mix well.
Your fruit salad is ready to be served. Serve immediately.
Tips
If you are preparing and keep the fruit salad early then keep in the fridge until serving else the curd will start to become sour which will affect the taste.
If you are using black grapes then also serve immediately else the curd will get sour or else keep in refrigerator until the time of serving. And add the black grapes only while serving the fruit salad.
If some fruit salad remains then you can refrigerate and use it the next day. Do not refrigerate for more than one day.
