Kook (Potato) chirdinae (Smashed potato raita) is a very common raita prepared among the Konkani’s. This raita is prepared with potatoes, curd and with a seasoning. The traditional method does not involve the use of onion and tomatoes but now-a-days it is common to find recepies containing both the vegetables. The method of preparation I will mention in the variation. For now I will be doing the traditional version of the recepie. This (these) recepie(s) go well with rice, chappathis, rotis, etc…..It can also be had along with upma and pulse curries. A very healthy and refreshing raita. Do try it out…….
Ingredients
You need
- ½ of a medium sized potato which is pressure cooked
- 3 to 4 tbspn of thick curd (not too sour)
- Salt to taste
Seasoning
You need
- 1 or 2 green chilies (or as per your spiciness level)
- 1 or 2 red chilies (or as per your spiciness level)
- 1 small spoon mustard seeds
- 1 small spoon jeera /cumin seeds
- 1 sprig curry leaves
- Coconut oil for seasoning
Method
As already mentioned in the ingredient pressure cook the potato, cut the green chilies into small pieces, break the red chilies into 2 or 3 pieces and keep aside.
Take a clean bowl and mash the potatoes with a tumbler or a ladle after removing the peel.
Add curd and salt to the mashed potatoes in the bowl
Now do the seasoning as follows: heat oil in a kadai, add mustard seeds when they splutter add jeera green chillies and sauté for a second or till the color of the green chilies starts to fade. Then add the red chilies and curry leaves sauté for a second and pour the seasoning over the potato curd mix. Mix well
Your Kook chirdinae (Smashed potato raita) is ready to be served.
You can even refrigerate and serve it.
Variation 1
Adding tomatoes only
Only one small size tomato (ripe one) is enough if you are following the same amount of ingredients mentioned above. Wash and cut the tomato. Remove the seeds and then only add it along with the mashed potatoes. No need of mashing the tomatoes cutting them into small pieces will do. Rest of the procedure remains the same.
Variation 2
Adding onion only
For the amount of ingredients mentioned above you need only half of one medium size onion. Peel it cut it into small pieces and add it along with mashed potatoes. The rest of the procedure remains the same.
Variation 3
Adding both tomato and onion
For the amount of ingredients mentioned above you need one small size tomato and half of medium sized onion. Deseed the tomato. Cut both the onion and tomato into small pieces and add to the mashed potatoes. The rest of the procedure remains the same.
