Rava idili /sandhan is a soft, fluffy idili prepared using unroasted rava, spices,curd and even vegetables of your choice. The batter so obtained is steamed in an idili maker and made into idilis. Now what I have told here is a typical South Indian rava idili. We Konkani’s also make rave idili but in a slightly different way from the South Indian rava idili. We ferment the batter and then prepare idilis /sandhan. This type of idili is usually prepared on ‘Ekadasi’ day.

- 1 cup urad (To prepare the urad dal batter)
- 2 cups Bombay rava
Method
Preparing the urad dal batter
Wash and soak the urad dal for 4 to 5 hours. Grind the urad dal to fine batter adding water.
Preparing the rava
We have to steam cook the rava for 20 minutes. I have used unroasted Bombay rava. For that take rava in a clean cotton cloth. Place this cloth covered on top of a perforated plate in an idili steamer. See that the perforated plate is not very near to the water below, in the steamer. Because if the water boils the rava will get wet. Now close the steamer with a lid and cook for 20 minutes.
Preparing the batter
Add the cooked rava to the idili batter and mix well. Keep this batter for fermentation overnight.
Preparing the rava idili Konkani style
Now grease oil to idili plates and pour the batter into the depressions in the idili plate.
Steam cook the idilis for 10 to 15 minutes or until done. You can check for doneness by inserting a tooth pick into the idili and if the tooth pick comes out clean your idili is ready else cook for some more time.
Your Rava idili is ready to be served.
Serve it with tomato chutney/coconut chutney/sambar.
Preparing rava sandhan Konkani style
Keep the idili steamer on the stove and let the water in it boil. Now grease a container that will fit in the steamer with oil. Pour the batter into the container. Place the container in the steamer. Close the lid of the steamer. Steam cook for 12 to 15 minutes or until done. You can check for doneness by inserting a tooth pick into the sandhan in the steamer. If the tooth pick comes out clean then your rava sandhan Konkani style is ready else cook for some more time. Once done cut it into pieces of your choice when cooled.
Your rava sandhan Konkani style is ready to be served.
Serve it with tomato chutney/coconut chutney/sambar.
