Pamma upma (Broken rice upma) is usually had as a breakfast dish in Konkani homes. Pamm is nothing but broken rice. Broken rice is fragments of rice grains which are formed during the traditional process of drying, transport or milling of rice grains. Broken rice can be separated from whole grains of rice using various separators (Through search results from google).
Pamma upma is also prepared by the traditional method of upma preparation by Konkani’s. You can even add vegetables and nuts to increase the flavour, taste and richness of the dish. You can even pack and give this dish into your children’s lunch box.
I will be discussing the traditional method of Upma preparation using Pamm – Pamma Upma (Broken rice upma)
Ingredients
You need
- 1 cup broken rice (Pamm) washed and soaked for 15 minutes
- 2 to 3 cups water (The quantity of water required will vary depending in the quality of the broken rice used)
- Salt as per taste
For seasoning
- Coconut oil as required for seasoning
- A small spoon mustard
- A small spoon cumin seeds/jeera
- A small spoon urad dal
- 5 to 6 red chillies (Or as per your spiciness level)
- 1 to 2 inch piece of ginger finely chopped
- 2 sprigs of curry leaves
For garnishing
- 2 to 3 tbspn grated coconut
Method
Heat oil in a kadai/pan. Add mustard seeds and when they splutter add urad dal. Sauté until it turns rose colour and crispy. Now add the red chillies and sauté till the raw flavour of the chillies goes off. Now add the curry leaves followed by finely chopped ginger and sauté for 3 to 4 seconds. Now pour the measured amount of water. The amount of water required will depend on the quality of the broken rice used. I have poured 2 to 3 cups of water.
Let the water come to rolling boil. Reduce the flame and add the washed and soaked broken rice.
Mix all the ingredients and close and cook for 10 to 15 minutes on low flame.
Once the broken rice is completely cooked garnish with ghee and grated coconut. Now mix the upma gently.
Your Pamma upma (Broken rice upma) is ready to be served.
Tips
Add any vegetables of your choice like carrots, green peas, cabbage, cauliflower, beans to the upma and increase its nutritional value.
You can even add cashewnuts, raisins, badam to the upma and increase its richness.
