Flaked rice upma (Phova upma), is a very delicious and filling recipe that can be had along with tea and coffee. ‘Phovu’ in Konkani means flaked rice. Children usually like the dish very much. Flaked rice upma (Phova upma ) is healthy nutritious and filing dish. You can have this with banana either ‘Nanderbalae kele ukkalenae’ (Cooked Nendren Banana), or Robusta or even’ Nanjali poovan’. You just have to dip the cut end of the banana in the phova upma so that the upma get coated on the banana, then take a bite of the banana along with the upma and just relish the taste of spiciness of upma and sweetness of banana in your mouth. I am sure you are not going to stop with just one……!!!!!
So let us come to this simple and easy to prepare recipe. Onions and garlic have not been used in this recipe. Adding onion is optional.
Ingredients
You need
- 1 cup of flaked rice (Phovu) (Red or white) I would prefer the red one as it is more tastier than the white
- 1 cup grated coconut (the more coconut the more the tastier it is)
Seasoning
You need
- 1 tbspn coconut oil
- A small spoon mustard
- A small spoon jeera (cumin seeds)
- A small spoon urd dhal
- 2 to 3 green chilies (or as per your spiciness level)
- 2 to 3 red chilies (or as per your spiciness level)
- 1 sprig curry leaves
- Salt is optional (Your phova is already having it)
Method
First and foremost take the Phova (flaked rice) on a plate add the grated coconut and mix well and thoroughly with your hands to make it soft.
Apply a bit of pressure that will make it soft and more tasty. You can even sprinkle some water to make it soft. Keep this aside.
Slit the green chilies and cut the red chilies into 2 or 3 pieces and keep aside.
Now heat oil in a kadai for seasoning. Add the mustard seeds and when they crakle add the urd dhal sauté it for a second till they becomes light rose in color. Then add the jeera and slit green chilies and broken red chilies. Sauté for a second so that the green color of the chilies goes off.
Now add the phova (flaked rice) mixed with coconut into the seasoning and mix well so that the phova gets uniformly coated with the seasoning.
Your Flaked rice upma (Phova upma) is ready to be served. Serve it warm.
Tips
See that you do not over roast the phova or it will become hard to bite.
Salt is optional in this recipe. Just check for the salt if at all you have to add it then it is always better that you prepare a solution of salt in water and then add to the upma. This will help in salt getting evenly spread on the upma. You can add the salt after mixing the phova with the seasoning.
The recipe I have mentioned is the usual traditional one. You can add fried groundnuts on top while serving the upma.
If you are using onions then add it along with seasoning and slightly roast it till it becomes translucent.
