In Vellayappam left over batter recipe I am preparing a sweet dish out of the left over batter. I have used jaggary in the preparation but you can use sugar as well. The dish can be prepared as a 4’0 clock dish and had along with tea/coffee.

You need
- 2 cups of batter
- 5 to 6 tbspns grated jaggery (sugar can also be used)
Method
Dissolve the grated jaggery in the batter. Keep for 5 to 6 hours and take appam using an appachatti.
First grease the appa chatty with oil and pour one ladle full batter into the chatty. Once you pour batter you will see small holes being formed. Close and cook for 2 to 3 minutes or until done. Open the lid and soft spongy pancake is ready to be served.

Tips
You can add cardamom powder as well as dry fruits like cashew nuts, almonds to increase the richness of the dish.
