In Potato and vegetable combo curries I will be dealing with curries that are usually prepared by adding a vegetable in combination with potato for the preparation of a side dish for rice. These dishes are usually prepared in Konkani homes either for lunch or dinner.
You can use vegetables like the stem of amaranths without leaf, drumstick, brinjal, cucumber, Ivy gourd etc….
These are all simple and easy curries and can be prepared in a jiffy.
Ingredients
You need
- Potato
- Vegetable of your choice
- Water for cooking
- Salt to taste
For seasoning
- Oil for seasoning
- A small spoon mustard
- Red chilli powder as per your taste
Method
Peel and wash the potatoes and cut into cubes. Similarly peel, wash and cut the vegetable of your choice.
Heat oil in a kadai and add mustard seeds when they splutter add the red chilli powder and sauté it for a minute so that the raw flavour of the red chilli goes off. Now add the potatoes and the cut vegetables of your choice. Mix well. Add salt and water. Close and cook till the potatoes are cooked completely.
Your curry is ready to be served.
Serve with rice.
