Koorka (Chinese potato ) Mezhukuperati

Now Koorka  (Chinese potato ) Mezhukuperati is a Kerala dish which we Konkani’s have adopted in our menu. The difference of this recepie from our recipie is that in this coconut pieces and shallots have taken their place along with chili powder. Ingredients

You need

  • 1/4th Kg of Koorka (Chinese potato)
  • 1/4th  tspn turmeric powder
  • Salt to taste

Seasoning

You need

  • 2 tbspns Coconut oil
  • 1 tbspn coconut pieces
  • 5 to 6 no’s shallots
  • 1-2 cloves of garlic (optional)

Method

Peel the potatoes and cut them into small pieces and put in water (or the potatoes will brown very fast).

Wash it well to remove soil particles

Add these koorka in a vessel and cook it on a low flame adding turmeric powder and salt.

Cook till the potatoes become soft.

Once it is cooked remove from the flame.

Heat oil in a kadai. Add mustard seed and when they splutter add chili powder, shallots (garlic can be added at this stage) along with coconut pieces and sauté for 1 to 2 minutes.

Add cooked koorka (chinese potatoes) in it and close the kadai with a lid for 2 to 3 minutes. Use medium flame.

Open the lid and keep the flame high for water to evaporate.

Once the water evaporates switch off the flame. your Koorka  (Chinese potato ) Mezhukuperati is ready to be served.

Serve hot/warm with rice.

Tips

If you soak the Koorka (Chinese potato) in water for some time (around ½ hour) it will be easier to remove the peel and the soil sticking to it will also get washed off easily.
