Dudiya Kadamb (Sweet dish with pumkin)

Dudiya Kadamb (Sweet dish with pumkin) is a dish prepared from very ripe pumpkin. It is yummy to taste. It is steam cooked and a healthy dessert. The sweet taste of pumpkin along with its sweet smell adds to the richness of the dish. The main ingredients are raw rice, jaggery and ripe pumpkin.

Ingredients

You need

  • 1 cup raw rice
  • 100 g ripe reddish yellow pumpkin
  • 3 to 5 blocks of jaggery
  • 1 cup coconut scrapings
  • 8 to 10 numbers of cardamom (Powder and use)

 Soak raw rice for 3 to 5 hours.

Remove the seeds and skin of pumpkin and grate it nicely and keep aside.

If you are using jaggery blocks you can grate and keep them also (If you are using the jaggery with impurities then melt it and remove the impurities by sieving. But see that you use less water for melting the jaggery).

Add raw rice and coconut scrapings to a mixer grinder and grind to a coarse paste. Add only little water for grinding.

Making the batter

Transfer the batter to a container. To this batter add grated pumpkin, water, cardamom powder and salt. Add grated jaggery or jaggery syrup. Mix everything well. The batter should have a thick consistency so adjust the volume of water accordingly.

Place the container into an idili steamer. Steam cook for 20 to 30 minutes.

Pouring the batter into a vessel in a steamer

Check for doneness by inserting a tooth pick or a clean knife tip into it. If it comes out clean then it is cooked else keep for some more time.

When cool remove from the container by slowly inverting it and cutting into pieces of your desired shape.

Your Dudiya Kadamb is ready to be served.

Shelf life 2 days

Tips

The batter should have a thick consistency. If it becomes thin then adjust the consistency by adding Bombay rava/semolina

Be careful with the amount of water for your batter preparation if you are using the jaggery with impurities. Remember that you will be using little water for grinding also so adjust the quantity of water you will be using. The batter should have a thick consistency.

See that you transfer the batter into the container that you wish to keep in the steamer.
