Fried jackfruit seeds (Bikkand thallelein)

Fried jackfruit seeds (Bikkand thallelein) is slightly sweet and non crispy dish liked by young and old alike. It is prepared from seeds of fully mature jackfruit. ‘Bikkand’ in Konkani means jackfruit seeds. It is mandatory that you need seed of fully ripened jackfruit or else the dish will not taste good and may even not come out proper on cooking. Fried jackfruit seeds is an easy to prepare dish and even working women can prepare it after coming back from home.

Ingredients

  • Handful of jackfruit seeds of fully mature jackfruit
  • 1 small spoon chili powder
  • ¼ of a small spoon of turmeric powder
  • A pinch of asafetida
  • Oil for deep frying
  • Salt to taste

Method

Remove the outer peel and inner brown coating of the jack fruit seeds.

Put them in the separator of a pressure cooker or if you do not have a separator you can even use a wide mouth utensil that fits in your cooker.  Add chili powder, turmeric powder, asafetida and salt.

Put the seeds in the seperator of a pressure cooker

Mix thoroughly so that the spice powders get evenly coated on the seeds. You need not have to add water to the seed in the separator. Pressure cook as follows: after one whistle simmer and keep the flame for 3 to 5 minutes. Once done switch off the flame and leave the pressure cooker for cooling down.

Mix thoroughly for even coating

By this time the pressure cooker would have cooled down now remove the separator. Since I have used only less amount of seeds they will cool down fast and I can add them to oil directly. If you are using more then you should leave the seeds for cooling down before you put them in oil.

While the seeds are cooling down, heat oil for frying in a kadai also take and keep a strainer ready to remove excess oil.

Once the seeds are cooled, put them in oil and fry them. Flip over the seed in between to fry on both sides. When they are around 3/4th roasted remove from oil or else it will become difficult to chew and swallow. Repeat with rest of the seeds.

Drain away excess oil using tissue paper or strainer.

Your Fried jackfruit seeds (Bikkand thallelein) is ready to be served. Serve warm with evening tea or coffee.

Tips

Always use seeds of ripe jackfruit you can use just salt alone and fry the seed. The taste will be different. There will not be any spiciness.

If you do not want to fry it just have the seeds after pressure cooking it as such. Either adding salt alone or adding rest of the ingredients as well.
